Everyone LOVES Turkey pie, even more than the tukey dinner it follows.

Ingredients

  • FOR THE FILLING
  • 3 cups leftover turkey, cut up
  • 3 cups leftover cooked vegetables, peas, carrots, creamed onions, mushrooms, ect
  • 1/2 can cranberry sauce, jellied or whole berry
  • 1 cup leftover turkey gravy
  • 2 to 3 cups leftover turkey stuffing or dressing
  • FOR THE TOPPING
  • 6 cups leftover mashed potatoes, cold
  • 2 - egg yolks
  • 1/4 cup melted butter, cooled
  • 1/4 cup all purpose flour
  • 1/4 cup grated parmesan cheese
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon salt
  • 1 - prepared pie shell
  • - leftover gravy

How To Make turkey pie

  • Step 1
    preheat oven to 375
  • Step 2
    For the filling: Mix all ingredients in large bowl, set aside.
  • Step 3
    For the topping: Mix the potatoes and eggs first, then the rest of the ingredients, set aside.
  • Step 4
    Lay your prepared pie shell in a deep dish pie dish. I use the roll out kind, because the ones that come in a tin are not deep enough.
  • Step 5
    form your edging the way you like.
  • Step 6
    pour filling into shell, pressing down to fill holes.
  • Step 7
    spread topping over filling, pressing down to seal all holes.
  • Step 8
    Bake for about an hour, hour and 15 minutes, or until topping is golden brown. Remove from oven and set on counter for 10 minutes before serving.
  • Step 9
    serve with gravy, if desired.
