turkey pancakes..great for left over turkey

Here is another Church Cookboook recipe from OHIO...1988 Great for turkey leftovers!!! Don't we all have leftovers!!! You can freeze the leftovers and have this recipe in a week or two!! Makes a wonderful lunch. Please enjoy..... Nancy...11/22/12

Ingredients For turkey pancakes..great for left over turkey

  • 3
    eggs...beaten
  • 3 c
    shredded raw potatoes, drained.....about 3
  • 1-1/2 tsp
    salt
  • 1-1/2 c
    finely chopped, cooked turkey
  • 1-1/2 tsp
    grated onion
  • 1 Tbsp
    flour
  • dash
    of black pepper

How To Make turkey pancakes..great for left over turkey

  • 1
    in a mixing bowl combine eggs,potato,salt, turkey, onion and a dash of pepper. Add remaing ingredients and mix well. Using about 1/4 cup of the batter for each pancake, drop onto hot greased griddle, spreading to about 4 inches in diamenter. Cook on medium low heat for 3-4 minurtes on each side. Serve with a cranberry sauce.
