This is a good use for that extra holiday turkey. The gravy also makes a good base for chichen pot pie. Add whatever cooked vegetables that you like and bake in a crust.

Ingredients
- 4 cups turkey, cooked and cubed
- 8 - english muffins, toasted
- 1 stick butter
- 3/4 cup flour
- 4 cups whole milk
- 1 - onion, sliced thin
- 1/2 cup celery, diced
- - salt and pepper, to taste
How To Make turkey over english muffins

Step 1In large skillet, melt butter over low heat.

Step 2Saute onion and celery until soft.

Step 3Add flour, stirring until you have a lightly browned roux.

Step 4Slowly, add milk and cook over medium low to medium heat until mixture thickens.

Step 5Add turkey, salt and pepper.

Step 6While gravy is coming to a boil put English Muffins in toaster.

Step 7Serve turkey mixture over well toasted English Muffins.
