Turkey over English Muffins
turkey, cooked and cubed
english muffins, toasted
salt and pepper, to taste
1In large skillet, melt butter over low heat.
2Saute onion and celery until soft.
3Add flour, stirring until you have a lightly browned roux.
4Slowly, add milk and cook over medium low to medium heat until mixture thickens.
5Add turkey, salt and pepper.
6While gravy is coming to a boil put English Muffins in toaster.
7Serve turkey mixture over well toasted English Muffins.
