turkey medley over muffin biscuits
This is my take on another recipe I have posted here :(http://www.justapinch.com/recipes/side/potatoes/easy-skillet-pot-pie.html?p=1) I substituted turkey for the beef ,used corn instead of peas and cream of chicken soup instead of mushroom, and biscuits instead of mashed potatoes.. My family said it was great and it will be a keeper..hope you give this recipe a try too. (You are going to love the Biscuits.....?

Ingredients
- 1 pound ground turkey
- 1/2 cup diced onion
- 10 ounces can cream of chicken soup with herbs
- to taste - salt and pepper
- 1/2 package i used about 6 oz. baja blend corn (herdez);microwave the corn
- 1/4 cup shredded cheddar jack cheese
- MUFFIN BISCUITS
- 2 1/4 cups bisquick
- 2/3 cup milk
How To Make turkey medley over muffin biscuits

Step 1Scramble turkey meat in skillet with a little oil or bacon grease(remember turkey is always a bit dry);until no longer pink; Add the onions cook until translucent. Cook the corn in the microwave for 5 minutes.Set aside.

Step 2Stir in the cream of chicken soup with herbs. Add 1 soup can of water..Stir in the corn, add the cheese and stir to blend.Turn heat to low and make muffin /biscuits.

Step 3Muffin Biscuits: Heat oven to 450º. Use a 6 well non stick muffin tin. Combine the Bisquick and the milk and stir to make a soft dough. Divide dough evenly in the 6 muffin wells-they will be filled to the very top. Bake in hot oven for 9 minutes and 30 seconds. Test with wooden toothpick...These turn out beautifully..
