turkey meatloaf - moist, tender, easy & fast
This turkey meatloaf is moist, delicious, healthy, and economical. Don't let the number of steps put you off. I have just broken down the steps for clarity. You could make this as a dump and mix, but I think the flavour and texture is better when the vegetables are softened first. I have also tried to use as few utensils and pans as possible to make for easy cleanup. I love to cook but I dislike clean up. Leftovers are a good substitute for deli meat in sandwiches.

Ingredients
- 1 tablespoon neutral oil (for the saute pan)
- 1 pound ground turkey
- 1 medium onion, chopped
- 1 medium carrot, chopped
- 1 stalk celery, chopped
- 1 clove garlic, chopped
- 1/2 cup bread crumbs, dry
- 1/3 cup milk (enough to moisten bread crumbs)
- 1-2 teaspoon herbs of choice
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes or hot sauce
- 2 teaspoons soy sauce
- 2 teaspoons Worcestershire sauce

Step 1Saute the onion, carrot, celery, and garlic at medium heat for about 8-10 minutes. Stir regularly to soften but not brown. Then allow to cool to room temperature. Add the seasonings to the vegetables and mix.

Step 2While vegetables are softening soak the bread crumbs in the milk in a measuring cup.

Step 3Put the ground turkey in a big bowl and break it up if it is in a block.

Step 4When vegetables have cooled add them and the bread crumbs mixture to the ground turkey. Use the measuring cup to beat the eggs to break the yolks and add the eggs to the bowl with the meat mixture.

Step 5Mix gently (I used 2 forks) to combine all ingredients. If you use your hands be careful not to overmix and toughen the meat.

Step 6Optional: Make a tiny meat patty and cook it in the skillet you used to soften the vegetables. Taste it for seasoning. This step is optional but I like to make sure the loaf is seasoned to my taste before I bake it.

Step 7Put meat mixture in a parchment lined loaf pan (for easy cleanup) and press down lightly to form the meat loaf.

Step 8Bake in a preheated 350 F. oven for 30 to 40 minutes until a meat thermometer reads 165 F. Remove from oven and allow to stand for 10 minutes.
