Ingredients
- 3 cups turkey, cooked and shredded
- 2 cups sour cream
- 2 cups shredded cheddar cheese
- 1 teaspoon salt
- 12 - corn tortillas
- 1/3 cup corn oil
- SAUCE INGREDIENTS
- 2 cans green chiles
- 1 - minced garlic clove
- 2 tablespoons olive oil
- 2 cups chopped onion
- 1 teaspoon salt
- 1/2 teaspoon oregano
- 1/2 cup water
- 1 1/2 pounds stewed tomatoes
How To Make turkey enchiladas

Step 1Combine turkey with sour cream, cheese and 1 teaspoon salt.

Step 2Heat 1/3 cup oil and dip tortillas in until soft and drain.

Step 3Stuff with turkey mix and roll.

Step 4Arrange side-by-side with seam side down in shallow pan.

Step 5Turkey Sauce: Rinse seeds from chiles and chop.

Step 6Saute with garlic in oil.

Step 7Add stewed tomatoes, onions, 1 teaspoon salt, oregano and water.

Step 8Simmer uncovered until thick, about 1/2 hour.

Step 9Pour chili sauce over enchiladas and bake at 350 degrees 20-30 minutes.

Step 10Let set 5-10 minutes before serving.
