    turkey, cooked and shredded
  • 2 c
    sour cream
  • 2 c
    shredded cheddar cheese
  • 1 tsp
    salt
  • 12
    corn tortillas
  • 1/3 c
    corn oil
  • SAUCE INGREDIENTS

  • 2 can(s)
    green chiles
  • 1
    minced garlic clove
  • 2 Tbsp
    olive oil
  • 2 c
    chopped onion
  • 1 tsp
    salt
  • 1/2 tsp
    oregano
  • 1/2 c
    water
  • 1 1/2 lb
    stewed tomatoes

How to Make Turkey Enchiladas

Step-by-Step

  1. Combine turkey with sour cream, cheese and 1 teaspoon salt.
  2. Heat 1/3 cup oil and dip tortillas in until soft and drain.
  3. Stuff with turkey mix and roll.
  4. Arrange side-by-side with seam side down in shallow pan.
  5. Turkey Sauce: Rinse seeds from chiles and chop.
  6. Saute with garlic in oil.
  7. Add stewed tomatoes, onions, 1 teaspoon salt, oregano and water.
  8. Simmer uncovered until thick, about 1/2 hour.
  9. Pour chili sauce over enchiladas and bake at 350 degrees 20-30 minutes.
  10. Let set 5-10 minutes before serving.
