Ingredients

  • 3 cups turkey, cooked and shredded
  • 2 cups sour cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 12 - corn tortillas
  • 1/3 cup corn oil
  • SAUCE INGREDIENTS
  • 2 cans green chiles
  • 1 - minced garlic clove
  • 2 tablespoons olive oil
  • 2 cups chopped onion
  • 1 teaspoon salt
  • 1/2 teaspoon oregano
  • 1/2 cup water
  • 1 1/2 pounds stewed tomatoes

How To Make turkey enchiladas

  • Step 1
    Combine turkey with sour cream, cheese and 1 teaspoon salt.
  • Step 2
    Heat 1/3 cup oil and dip tortillas in until soft and drain.
  • Step 3
    Stuff with turkey mix and roll.
  • Step 4
    Arrange side-by-side with seam side down in shallow pan.
  • Step 5
    Turkey Sauce: Rinse seeds from chiles and chop.
  • Step 6
    Saute with garlic in oil.
  • Step 7
    Add stewed tomatoes, onions, 1 teaspoon salt, oregano and water.
  • Step 8
    Simmer uncovered until thick, about 1/2 hour.
  • Step 9
    Pour chili sauce over enchiladas and bake at 350 degrees 20-30 minutes.
  • Step 10
    Let set 5-10 minutes before serving.
