When you run out of ideas on what to do with all of thatbleft over turkey on Thanksgiving,here you go! Enjoy!

Ingredients

  • 1 cup milk
  • 1 cup left over gravy
  • 1/4 teaspoon white pepper
  • 2 teaspoons parsley, italian
  • 1 stick butter
  • 1 stick celery minced
  • 1 cup flour
  • 1 1/2 pounds turkey meat chopped very fine( i use my food proscessor for this)
  • 2 large eggs
  • 2 cups milk
  • 3 cups flour or cracker meal
  • 3 cups plain bread crumbs
  • 1 package wax paper
  • 1 quart frying oil

How To Make turkey croquettes

  • Step 1
    For the croquette batter,mix the milk,gravy,white pepper and parsley,heat in a heavy bottom pot,stir until smooth. Next: melt the butter,sauté the minced celery until soft,add the 1 cup of flour until smooth. Next: combine the milk and gravy mixture with the butter and flour,celey mixture then fold in the finely chopped turkey.
  • Step 2
    Shape into cone shaped servings,not to big. They should be about the size of a golf ball or slightly bigger.Place them on waxed paper until your done and ready to fry them.
  • Step 3
    Heat the oil in a heavy skillet and brown them on all sides. Serve with mashed potato and your gravy from Thanksgiving,enjoy!:)
