Ingredients For turkey croquettes

  • 1 c
    milk
  • 1 c
    left over gravy
  • 1/4 tsp
    white pepper
  • 2 tsp
    parsley, italian
  • 1 stick
    butter
  • 1 stick
    celery minced
  • 1 c
    flour
  • 1 1/2 lb
    turkey meat chopped very fine( i use my food proscessor for this)
  • 2 lg
    eggs
  • 2 c
    milk
  • 3 c
    flour or cracker meal
  • 3 c
    plain bread crumbs
  • 1 pkg
    wax paper
  • 1 qt
    frying oil

How To Make turkey croquettes

    For the croquette batter,mix the milk,gravy,white pepper and parsley,heat in a heavy bottom pot,stir until smooth. Next: melt the butter,sauté the minced celery until soft,add the 1 cup of flour until smooth. Next: combine the milk and gravy mixture with the butter and flour,celey mixture then fold in the finely chopped turkey.

    Shape into cone shaped servings,not to big. They should be about the size of a golf ball or slightly bigger.Place them on waxed paper until your done and ready to fry them.

    Heat the oil in a heavy skillet and brown them on all sides. Serve with mashed potato and your gravy from Thanksgiving,enjoy!:)
