Ingredients
- 1 cup milk
- 1 cup left over gravy
- 1/4 teaspoon white pepper
- 2 teaspoons parsley, italian
- 1 stick butter
- 1 stick celery minced
- 1 cup flour
- 1 1/2 pounds turkey meat chopped very fine( i use my food proscessor for this)
- 2 large eggs
- 2 cups milk
- 3 cups flour or cracker meal
- 3 cups plain bread crumbs
- 1 package wax paper
- 1 quart frying oil
How To Make turkey croquettes

Step 1For the croquette batter,mix the milk,gravy,white pepper and parsley,heat in a heavy bottom pot,stir until smooth. Next: melt the butter,sauté the minced celery until soft,add the 1 cup of flour until smooth. Next: combine the milk and gravy mixture with the butter and flour,celey mixture then fold in the finely chopped turkey.

Step 2Shape into cone shaped servings,not to big. They should be about the size of a golf ball or slightly bigger.Place them on waxed paper until your done and ready to fry them.

Step 3Heat the oil in a heavy skillet and brown them on all sides. Serve with mashed potato and your gravy from Thanksgiving,enjoy!:)
