left over gravy

white pepper

parsley, italian
1 stick
1 stick
celery minced
1 c
1 1/2 lb
turkey meat chopped very fine( i use my food proscessor for this)
2 large
2 c
3 c
flour or cracker meal
3 c
plain bread crumbs
1 pkg
wax paper
1 qt
frying oil

How to Make Turkey Croquettes


  • 1For the croquette batter,mix the milk,gravy,white pepper and parsley,heat in a heavy bottom pot,stir until smooth.
    Next: melt the butter,sauté the minced celery until soft,add the 1 cup of flour until smooth.
    Next: combine the milk and gravy mixture with the butter and flour,celey mixture then fold in the finely chopped turkey.
  • 2Shape into cone shaped servings,not to big. They should be about the size of a golf ball or slightly bigger.Place them on waxed paper until your done and ready to fry them.
  • 3Heat the oil in a heavy skillet and brown them on all sides. Serve with mashed potato and your gravy from Thanksgiving,enjoy!:)
