This recipe was in my new Ruralite magazine,the article was called"Lovin'Turkey Leftovers".I will be posting all the recipes because they all sound good, and wanted to share.

leftover prepared stuffing,divided
4 c
(about a pound)coarsely chopped leftover cooked turkey
3/4 c
1/4 c
whole-berry cranberry sauce
2 c
left-over mashed potatoes
1 1/2 c
(about 6 oz.) shredded mozzarella cheese
1/2 c
celery,thinly sliced

How to Make Turkey Casserole


  • 1Preheat oven to 375F.Spray an 8-baking dish with non-stick cooking spray.Spoon 2 cups of stuffing into the baking dish and top with turkey.
  • 2Combine 1/4 cup mayonaise with the cranberry sauce and spread evenly over turkey.Comine the remaining 1/2 cup mayonaise,potatoes and cheese in a large bowl.Evenly spread this on top of the cranberry and mayo mixture.Top it all with celery and the remaining 2 cups of stuffing.
  • 3Bake 40 minutes or until heated through. Let stand 10 minutes before serving.If desired, garnis with dried cranberries
