turkey and dressing (southern style)

This recipe has been handed down from my grandmother to my mother and then to me. This is a tradition to have sweet potato casserole or potato salad, rolls sweet tea and desserts.

Ingredients

  • 2 large pans cornbread, cooked night before
  • 2 medium onions, chopped
  • 6 - boiled eggs, chopped
  • 3 stalks celery, chopped
  • 3 slices white bread, pulled apart in small pieces
  • - chicken or turkey broth to stir in
  • 2 cans cream of chicken soup
  • 1 can cream of celery soup
  • - salt & pepper to taste
  • - sage to taste (about 2 tsp.)

How To Make turkey and dressing (southern style)

  • Step 1
    Note: Take inside stuffings out of turkey and discard. Salt and pepper inside and out. Bake turkey in roaster in about 2-3 inches of water at 350 degrees for 2 1/2 to 3 hours. Mix dressing ingredients well, add salt and pepper to taste. Pour into casserole dishes. Add white turkey meat in and on top if desired.
  • Step 2
    Bake at 350 degrees until brown. (about 45 minutes to 1 hour.)
  • Step 3
    Freeze other dishes until needed.
  • Step 4
    Cornbread for dressing: 2 cups self-rising cornmeal, sifted 2 tsp. baking powder 1 tsp. salt 3 eggs 2 cups buttermilk 3 Tbsp. oil Preheat the oven to 450 degrees Sift together the cornmeal, baking powder and salt. Let the batter rest while the skillet and oil are heating (about 5 minutes). Quickly pour the batter into skillet and return to oven. Bake for 25-30 minutes. Makes 1 pan of cornbread. For dressing, you need 2 large pans of cornbread made the day before you make dressing.
