Turkey and Dressing (Southern Style)

2 largepans cornbread, cooked night before
2 mediumonions, chopped
6boiled eggs, chopped
3 stalk(s)celery, chopped
3 slicewhite bread, pulled apart in small pieces
·chicken or turkey broth to stir in
2 can(s)cream of chicken soup
1 can(s)cream of celery soup
·salt & pepper to taste
·sage to taste (about 2 tsp.)
How to Make Turkey and Dressing (Southern Style)
- Note: Take inside stuffings out of turkey and discard. Salt and pepper inside and out. Bake turkey in roaster in about 2-3 inches of water at 350 degrees for 2 1/2 to 3 hours.
Mix dressing ingredients well, add salt and pepper to taste. Pour into casserole dishes. Add white turkey meat in and on top if desired.
- Bake at 350 degrees until brown. (about 45 minutes to 1 hour.)
- Freeze other dishes until needed.
- Cornbread for dressing:
2 cups self-rising cornmeal, sifted
2 tsp. baking powder
1 tsp. salt
2 cups buttermilk
3 Tbsp. oil
Preheat the oven to 450 degrees Sift together the cornmeal, baking powder and salt. Let the batter rest while the skillet and oil are heating (about 5 minutes). Quickly pour the batter into skillet and return to oven. Bake for 25-30 minutes. Makes 1 pan of cornbread. For dressing, you need 2 large pans of cornbread made the day before you make dressing.
