There are many recipesfor meat loaf and to get my children to eat more vegies I made this meat loaf.

Ingredients For turkey and bulgur loaf

1 ccoarse or medium bulgur

3/4 ctomato juice
-
2 Tbspolive oil, extra virgin

2eggs
-
2 clovegarlic..minced
-
1/4 tspallspice, ground
-
1/4 tspcumin ground
-
1onions, yellow, medium fine chopped
-
1 cgrated carrot
-
11/2 cgrated zucchini
-
1 lbground turkey
-
1/2 cchopped sweet red pepper
-
1/2 cketchup or chili sauace
-
2 clovegarlic minced
-
1/4 tspcayenne pepper
How To Make turkey and bulgur loaf

1MEAT LOAF....In bowl stir together tomato juice and bulgur and let stand for 30 minutes. In separate bowl mix together.eggs. oil, garlic and spices...add turkey, vegetables and bulgur..make sure they are well combined.

2Grease two. pans { 9x5x2 ..add turkey mix to the 2 pans and bake in 350F oven for 30 minutes.

3While turkey loaf is baking..mix together the ketchup or chili sauce, and garlic and cayenne pepper ..after 30 minutes of baking spread the sauce mixture over loaves and bake an additional 50 minutes or check center with thermometer to reach 185 degrees.

4This freezes very well.
