There are many recipesfor meat loaf and to get my children to eat more vegies I made this meat loaf.

coarse or medium bulgur
3/4 c
tomato juice
2 Tbsp
olive oil, extra virgin
2 clove
1/4 tsp
allspice, ground
1/4 tsp
cumin ground
onions, yellow, medium fine chopped
1 c
grated carrot
11/2 c
grated zucchini
1 lb
ground turkey
1/2 c
chopped sweet red pepper
1/2 c
ketchup or chili sauace
2 clove
garlic minced
1/4 tsp
cayenne pepper

How to Make Turkey and Bulgur Loaf


  • 1MEAT LOAF....In bowl stir together tomato juice and bulgur and let stand for 30 minutes. In separate bowl mix together.eggs. oil, garlic and spices...add turkey, vegetables and bulgur..make sure they are well combined.
  • 2Grease two. pans { 9x5x2 ..add turkey mix to the 2 pans and bake in 350F oven for 30 minutes.
  • 3While turkey loaf is baking..mix together the ketchup or chili sauce, and garlic and cayenne pepper ..after 30 minutes of baking spread the sauce mixture over loaves and bake an additional 50 minutes or check center with thermometer to reach 185 degrees.
  • 4This freezes very well.
