super turkey enchiladas
My family loves these. I often times will make a large batch and then freeze them individually for a quick lunch.

Ingredients
- 1 1/2 cups cooked turkey, shredded (or chicken)
- 1 1/2 cups cheddar cheese, shredded
- 1/2 cup onion, chopped
- 1 10-3/4 ounces cream of mushroom soup
- 1 10-3/4 ounces tomato soup
- 1 10-oz cans enchilada sauce
- 12 - corn tortillas (or flour)
How To Make super turkey enchiladas

Step 1Combine turkey, onion and 1/2 cup cheese and set aside.

Step 2Combine soups and sauce.

Step 3Dip tortillas in hot oil a few seconds on each side to soften. (I used the microwave to heat them up).

Step 4Top each with a heaping tablespoon turkey mixture, roll up and place seam side down in 13x9 inch baking dish.

Step 5Pour sauce over and top with 1 cup cheese.

Step 6Bake 350ºF for 1/2 hour.

Step 7Leftovers can be refrigerated and reheated.
