stir-fry turkey fajitas
I have always loved to cook. This was a dinner I enjoyed making when Uncle Charlie lived with us in Joliet. In fact, I made it so often, the recipe card has soy sauce on it!

Ingredients
- 4 - 10" flour tortillas
- 2 tablespoons sugar
- 1/4 cup sodium-reduced soy sauce
- 2 tablespoons lemon juice
- 1 tablespoon cornstarch
- 1/4 teaspoon crushed red pepper
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 3 medium green, red, or yellow sweet peppers, cut into strips
- 12 ounces skinned, boned turkey breasts, cut into thin strips

Step 1Wrap tortillas in foil, warm in 300 degree oven. Combine soy sauce, sugar, lemon juice, cornstarch, and crushed pepper. Spray a skillet with PAM. Stir fry onion, sweet peppers and garlic in skillet over med heat 3-4 min. Remove from skillet. Add oil to skillet, stir fry turkey over med-high heat 3-4 min or until no longer pink. Add soy sauce mixture. Cook and stir till bubbly. Add sweet pepper mixture, heat through. Spoon onto tortillas, roll up.

Step 2Note: I doubled the sauce, and used 2 small tortillas each instead of 10 inch tortilla each.
