I love using ground turkey instead of ground beef, but I hate how dry turkey burgers are unless they are "beefed" up. This recipe has evolved in my attempts to make turkey burgers juicy and delicious!

  • 1/2 c
    chopped onion
  • 2 clove
    garlic chopped
  • 1/4 c
    green pepper diced
  • 2 Tbsp
    tomato paste
  • 1/2 c
    whole kernel corn (frozen)
  • 1/2 c
    canned black beans, drained & rinsed
  • 2 Tbsp
    olive oil
  • 1 lb
    ground turkey
  • 1 c
    corn tortilla chips, crushed
  • 1 tsp
    ground cumin
  • 1/2 tsp
    cayenne pepper
  • 1
  • 1 tsp
  • ·
    sliced tomato & avocado
  • 4
    kaiser rolls

  • 1/4 c
    canned chipotles in adobo sauce, chopped
  • 1 c

How to Make Southwest Turkey Burgers


  1. Combine the chipotles and mayo in a small bowl. Cover and refrigerate until ready to assemble burgers.
  2. In a saute pan heat oil, then add onions, garlic, and green pepper. Cook until vegetables are tender, 3 to 5 minutes. Add the tomato paste and stir until well blended. Remove pan from heat and add the corn and black beans. Stir carefully
  3. In a large mixing bowl, combine the turkey, corn chips, and spices. Add the corn and black bean mixture and egg. Mix well.
  4. Shape mixture into 4 burgers. Grill over medium high heat until cooked through (about 10-15 minutes). Assemble burgers placing one on each roll with the tomato and avocado slices and chipotle mayo.
