What shall I make with leftover smoked turkey? I think I'll make a Salad Sandwich. This is what I came up with. Yeah, it was pretty freakin' good! I hope you enjoy it. Cooking with Passion, sw :)

Ingredients

  • 1 lb
    smoked turkey breast, cooked & cubed
  • 1/4 c
    pomegranate infused cranberries-reconstituted in warm water & drained
  • 2 oz
    pistachio nuts, chopped
  • 1 small
    red onion, chopped
  • 1/2 stalk
    celery, chopped
  • 3/4 c
    mayonnaise-more if needed
  • 1 pkg
    dry ranch mix
  • 2 tsp
    black pepper, course ground
  • 4-6
    onion rolls
  • 1-2 oz
    arugula

How to Make Smoked Turkey PomCranberry & Nut Salad Sandwich

Step-by-Step

  1. in a large mixing bowl, combine ingredeints 1-8. mix well. chill for at 30 minutes. build your sandwich-bottom of bun, arugula, turkey salad and top of bun. Enjoy!
