smoked turkey pomcranberry & nut salad sandwich

What shall I make with leftover smoked turkey? I think I'll make a Salad Sandwich. This is what I came up with. Yeah, it was pretty freakin' good! I hope you enjoy it. Cooking with Passion, sw :)

Ingredients

  • 1 pound smoked turkey breast, cooked & cubed
  • 1/4 cup pomegranate infused cranberries-reconstituted in warm water & drained
  • 2 ounces pistachio nuts, chopped
  • 1 small red onion, chopped
  • 1/2 stalk - celery, chopped
  • 3/4 cup mayonnaise-more if needed
  • 1 package dry ranch mix
  • 2 teaspoons black pepper, course ground
  • 4-6 - onion rolls
  • 1-2 ounce arugula

How To Make smoked turkey pomcranberry & nut salad sandwich

  • Step 1
    in a large mixing bowl, combine ingredeints 1-8. mix well. chill for at 30 minutes. build your sandwich-bottom of bun, arugula, turkey salad and top of bun. Enjoy!
