Tears of joy. That's what happened when my husband first tried this recipe! I wrangled it from a dear friend of mine after we both flipped out over this flavorful rub. It is AMAZING. Now, I keep a batch of the rub in a tin for whipping up a quick grilled chicken.

Blue Ribbon Recipe

This rub is good on chicken, pork or seafood. And the mustard yogurt is especially good with beef or chicken. I sure hope you enjoy it as much as my family does.

Ingredients

  • 2 tablespoons kosher salt
  • 2 tablespoons pepper, freshly ground
  • 1/4 cup paprika
  • 1 tablespoon cayenne pepper
  • 2 tablespoons cumin
  • 2 tablespoons brown sugar
  • 1 teaspoon garlic powder
  • 1 tablespoon lemon peel
  • 1 - roasting chicken
  • MUSTARD YOGURT INGREDIENTS
  • 2 tablespoons dijon mustard
  • 2 tablespoons red wine vinegar
  • 1/3 teaspoon pepper, freshly ground
  • 3 tablespoons olive oil, extra virgin
  • 3 - green onions, thinly sliced with tops
  • 2/3 cup yogurt, low-fat, plain

How To Make rub, sweat and tears

  • Step 1
    Mix rub ingredients together. This mix will keep for several months in an airtight container.
  • Step 2
    Rub on chicken at least 4 hours before cooking.
  • Step 3
    Cook in 350 oven or on a grill with indirect heat until internal temperature is 165 degrees.
  • Step 4
    Mustard Yogurt Dip: Mix yogurt mustard ingredients together. This can be used as a dip with the chicken, if so desired.
