This meal is awesome when you are wanting Thanksgiving dinner but don't want all the trouble of the whole Thanksgiving meal.

Ingredients

  • 3 tablespoons butter
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon thyme, dried
  • 2-3 - celery stalks, diced fine
  • 1 small apple, peeled and diced
  • 1 small onion, diced fine
  • 1 1/2 cups stuffing cubes, crushed
  • 1 1/2 cups chicken stock
  • 1/3 cup dried cranberries, steeped in boiling water
  • 2 pounds ground turkey
  • 1 cup extra sharp cheddar cheese, shredded
  • 1 teaspoon poultry seasoning
  • 1 large egg

How To Make pilgrim meatloaf

  • Step 1
    melt butter with the olive oil in saute pan, add thyme, celery, apples, onion and a little salt and pepper, saute until tender, then set aside and cool.
  • Step 2
    drain the steeped cranberries and add to ground turkey and all other ingredients, mix well, add cooled celery,apples and onions, mix in well
  • Step 3
    form into a loaf on a baking sheet, bake at 400 for 50 to 60 minutes
  • Step 4
    I serve this with steamed green beans and mashed sweet potatoes. Roast sweet potatoes at 350 until tender, peel, then mash with chicken stock and salt and pepper to taste.
