Ingredients
- 1/4 cup olive oil
- 1.5 cups onions, finely chopped
- 1/2 cup celery, chopped
- 3 - garlic cloves, minced
- 1 teaspoon basil
- 1 teaspoon oregano
- 1 teaspoon thyme
- 2.5 pounds ground turkey
- 1/2 cup sun dried tomatoes
- 1/2 cup parsley
- 2 - egg whites
- 1/2 cup bread crumbs
- 1.5 teaspoons salt
- 1.5 teaspoons black pepper
How To Make meatloaf with sun dried tomatoes

Step 1Preheat oven at 350.

Step 2Prepare a loaf pan or muffin tins with cooking spray and flour.

Step 3In a skillet, warm olive oil over medium heat.

Step 4Add onions, celery, garlic, basil, oregano and thyme, cover and cook, stirring once or twice, for 10 minutes.

Step 5Remove from heat and cool to room temperature.

Step 6Position a rack in the middle of the oven.

Step 7In a large bowl, mix together turkey, onion mixture, tomatoes, parsley, egg whites, crumbs, salt and pepper.

Step 8Transfer meat mixture to a shallow baking dish and shape it into a flat loaf or muffin tins; smooth the top of the loaf with the back of a spoon.

Step 9Bake about 1 1/2 hours depending on pan size.

Step 10Let rest on a rack for 10 minutes before slicing.
