I wrote this recipe today wanting something different to do with my left overs.

1 cup
diced onion
1 cup
diced carrot
1 cup
diced celery
1/4 cup
2 cups
chicken broth or more if needed
1 Tbsp
chicken soup base
1/2 tsp
1/2 tsp
3 cups
mashed potatoes
2 cups
shredded cheddar cheese
2 cups
chopped turkey
1 cup
corn or green beans

How to Make Leftover Turkey Shepherds Pie


  • 1Put 2 Tablespoons of butter in an oven proof skillet. Saute onions, carrots, and celery. Add salt and pepper. After vegetables are tender add flour. Cook 2-3 minutes, add chicken broth, soup base, corn and turkey.
  • 2Take off the heat and spread mashed potatoes over the top. Top with cheese and bake in a preheated 350* degree oven until heated through and cheese melts.
  • 3If you don't have any left over mashed potatoes make a pie crust and put over the top. Cut slits and bake in a 400* oven until golden brown.
