leftove turkey casserole

I had some bits of turkey left on the bones so I took it off and just started grabbng from there to see what I could put together. It turned out really delicious and you can alter this recipe about any way you want and it still will be good. The thing I like is that it's so simple to do and doesn't take long to put together. You could use chicken or other meat but I used turkey because it was in front of me in the freezer!

Ingredients

  • 3-4 cups cooked turkey (or meat of your choice) in bite sized pieces
  • 1 can peas or other vegetable
  • 2 cups sour cream, can be low fat
  • 4 cups cooked noodles, any width
  • 1/2 cup chopped green pepper and chopped onion
  • 1 small can sliced mushrooms
  • 1 1/2-2 cans cream of mushroom soup
  • 3/4 - 1 cups milk
  • 1 cup shredded cheddar or mozzarella cheese

How To Make leftove turkey casserole

  • Step 1
    Spray 13x9" baking pan with cooking spray
  • Step 2
    Cover with turkey bits and top with drained can of vegetables. I used peas.
  • Step 3
    Add sour cream and spread over meat and vegetables evenly.
  • Step 4
    Saute green peppers, onion, and mushrooms and spread evenly over top.
  • Step 5
    Mix soup and milk and pour over top. Put in oven and bake at 350* for 30 minutes.
  • Step 6
    Remove from oven and add cheese evenly to top and bake for another few minutes until the cheese melts. Serve.
