Ingredients

  • 3 Tbsp
    lime juice
  • 2 Tbsp
    olive oil
  • 1 tsp
    ground cumin
  • 1 tsp
    garlic powder
  • 2 c
    cooked turkey, coarsely chopped
  • ·
    salt & pepper to taste
  • 1 pkg
    10 ounce large tortilla chips, I used the blue corn organic chips
  • 1 can(s)
    16 fluid ounces refried beans
  • 2 c
    shredded monterey jack cheese
  • 2 c
    salsa
  • ·
    sour cream
  • ·
    cilantro, fresh

How to Make Leftover Turkey Nachos

Step-by-Step

  1. Heat oven to 425°F. Whisk together lime juice, olive oil, cumin and garlic powder.
  2. Add turkey to large/medium bowl. Toss mixture with turkey in a small bowl. Season with salt and pepper.
  3. Make a layer of tortilla chips to cover the bottom of a large 12 to 14-inch round or oval baking dish. (I used a 9 x 13 pyrex baking dish) Evenly spoon refried beans over chips.
  4. Top with turkey.
  5. Sprinkle with 1 cup shredded cheese. Make another layer of tortilla chips.
  6. Spoon half the salsa evenly over chips. Top with remaining cup of cheese.
  7. Bake nachos 15-20 minutes or until heated through and cheese melts and begins to bubble.
  8. Serve hot with remaining salsa, sour cream and cilantro, if desired.
