Wow! These nachos are packed with so much flavor. Not only is this a great way to use leftover turkey, it's delicious. The dressing mix brings this dish to a whole new level of yumminess! During the holidays when everyone is tired of the typical things you make with leftover turkey, give this a try for something new and different.

Ingredients
- 3 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 2 cups cooked turkey, coarsely chopped
- - salt & pepper to taste
- 1 package 10 ounce large tortilla chips, I used the blue corn organic chips
- 1 can 16 fluid ounces refried beans
- 2 cups shredded monterey jack cheese
- 2 cups salsa
- - sour cream
- - cilantro, fresh
How To Make leftover turkey nachos

Step 1Heat oven to 425°F. Whisk together lime juice, olive oil, cumin and garlic powder.

Step 2Add turkey to large/medium bowl. Toss mixture with turkey in a small bowl. Season with salt and pepper.

Step 3Make a layer of tortilla chips to cover the bottom of a large 12 to 14-inch round or oval baking dish. (I used a 9 x 13 pyrex baking dish) Evenly spoon refried beans over chips.

Step 4Top with turkey.

Step 5Sprinkle with 1 cup shredded cheese. Make another layer of tortilla chips.

Step 6Spoon half the salsa evenly over chips. Top with remaining cup of cheese.

Step 7Bake nachos 15-20 minutes or until heated through and cheese melts and begins to bubble.

Step 8Serve hot with remaining salsa, sour cream and cilantro, if desired.
