Great way to freshen up leftover Thanksgiving turkey and gravy.

Ingredients

  • 1 1/2 cups cooked turkey cut into small chunks
  • 1 tablespoon olive oil
  • 8 ounces fresh mushrooms sliced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1/2 cup frozen peas
  • 1 tablespoon lemon juice
  • 1/4 teaspoon each thyme and tarragon
  • 1 1/2 cups leftover turkey gravy
  • 1/4 cup fresh parsley chopped
  • 1 package puff pastry shells
  • IF YOU DON'T HAVE LEFTOVER TURKEY GRAVY USE 2 TBSP OF FLOUR AND 1 1/2 CUPS CHICKEN STOCK. MIX THE FLOUR INTO THE VEGGIES AND TURKEY THEN POUR IN THE CHICKEN STOCK AND COOK UNTIL THICKENED

How To Make left over turkey and gravy in puff pastry

  • Step 1
    Bake the puff pastry shells according to package directions.
  • Step 2
    Add oil to a large skillet. Add the onions, and garlic and saute until softened. Add the mushrooms and cook until the mushrooms have given up their moisture. Add the cooked turkey and peas. Cook until warmed through. Stir in the lemon juice, thyme, tarragon, and fresh parsley.
  • Step 3
    Stir in the gravy and cook until warmed through. Taste and adjust for salt and pepper. Pop the top off the puff pastry shells and fill with the turkey mixture.
  • Step 4
    If you don't have leftover gravy. Once everything is in the pan add 2 tbsp flour and stir then stir in the chicken stock and stir until thickened.
