My family all love this meatloaf. It is healthy, or what we consider healthy as we don't eat red meat and has a unique flavor. Great with sweet potato fries and a salad.

- 1/2 cup rolled oats
- 1 - granny smith apple (peeled and grated)
- 1 - carrot (grated)
- 4 - scallions
- 1/12 teaspoon curry powder
- 1/12 teaspoon salt
- 3 tablespoons apricot preserves
- 1/12 tablespoon ketchup
