Okay Okay.... Here it is.... All the Turkey and Fixin's to go with..... I always had folks askin for this.... DON"T LET 8 HOURS PREP TIME SCARE YOU.... It's mostly for soaking in the brine...

Ingredients

  • 4 quarts water - that's a gallon
  • 3/4 cup non-iodized table salt - or - 1 1/8 cup kosher salt
  • 3/4 cup brown sugar
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • - add herbs to suit your taste
  • 1 tablespoon oregano, dried or fresh
  • 1 tablespoon thyme, dried or fresh
  • 1 large lemon - cut in half
  • 1 - large clean bucket - used to put the turkey and brine in
  • 20 to 25 pounds oh yeah !!!! and the turkey
  • 12 cups cubed bread - dried - your choice wheat or white.
  • 2 pounds jimmy dean sage sausage
  • 2 large yellow onions - small dice
  • 4 stalks celery - small dice
  • 1 tablespoon sage, dried or fresh
  • 1 tablespoon thyme, dried or fresh
  • 1 teaspoon salt
  • - hot water - enough to moisten this bread mixture to you liking.
  • - using the heart and liver or gizzard - dice fine

How To Make firemanbob's christmas turkey and doing it my way

  • Step 1
    Okay..... Here we go........ Rinse off the Turkey with water Using the Bucket, place all the ingredients ( the first 10 ) in the water and stir till combined. Place Turkey in the Brineing Solution and cover tightly. Keep bucket cool and away from ( traffic - those " have to see what's in the bucket people " ) Let sit for 6 to 7 hours.
  • Step 2
    Mean while as you are patiently waiting for the Turkey, You can start on the ' Stuffing " Take the Sausage and place in LARGE STOCK POT and partially cook / simmer till half cooked. Add remaining ingredients from the " cubed bread " down on the list. Don't forget the Liver / Gizzard and Heart... ( Okay these are optional )
  • Step 3
    When the " Brineing Time " is up... Take the Turkey out of the Brine and using the " stuffing " you can " STUFF the BIRD " and place in Large Roasting pan. OR!!! You can cook the " stuffing separately Place Turkey in Oven set at 285 degrees and cook for 5 to 6 hours. Low and Slow does it... Let Turkey rest after cooking for 10 minutes Merry Christmas and a Happy New Year to All of my Friends
