easy leftover turkey mini-fajitas

This is one of the recipes I created for using up that leftover holiday turkey. After several days of the traditional leftovers, your taste buds will appreciate the switch to the south-of-the-border flavors in these yummy little cheesy turkey fajitas.

Ingredients

  • 1 tablespoon olive oil
  • 1 large sweet onion, halved & sliced or rough chopped (your choice)
  • 2 to 3 cups sweet bell pepper slices (about 1/2 qt.; may use frozen)
  • 1 package taco seasoning mix (i like lawry's)
  • 2/3 cup water
  • 1 to 1 1/2 pounds leftover roasted turkey meat, bite size or thick shreds
  • 6 small flour tortillas
  • 3 cups shredded extra-sharp cheddar cheese
  • 1 or 2 large fresh tomatoes, sliced or chopped
  • lettuce, shredded or chopped
  • sour cream
  • salsa, your favorite
  • sliced black olives, optional (i like kalamata)

How To Make easy leftover turkey mini-fajitas

  • Step 1
    Gather and prep all ingredients.
  • Step 2
    Heat oil in large skillet over medium heat; add onions and peppers' saute until peppers are tender-crisp.
  • Step 3
    Stir in taco seasoning mix and water; add turkey. stirring until coated with taco seasoning sauce.
  • Step 4
    Cover, reduce heat to low/ medium-low and let simmer while preparing tortillas.
  • Step 5
    Place a tortilla in a medium skillet over medium heat; sprinkle 1/2 cup cheese over tortilla.
  • Step 6
    When cheese begins to melt, add 1 slice of tomato or equivalent amount of chopped tomato.
  • Step 7
    Spoon some of the turkey mixture over tomatoes (about 1/6 of the mixture.)
  • Step 8
    Remove from skillet to serving plate; scatter lettuce on top.
  • Step 9
    Add a dollop of sour cream and a spoonful of salsa on top of the lettuce (and sliced olives, if using.) Serve.
