easy leftover turkey mini-fajitas
This is one of the recipes I created for using up that leftover holiday turkey. After several days of the traditional leftovers, your taste buds will appreciate the switch to the south-of-the-border flavors in these yummy little cheesy turkey fajitas.

Ingredients For easy leftover turkey mini-fajitas

1 Tbspolive oil
-
1 lgsweet onion, halved & sliced or rough chopped (your choice)

2 to 3 csweet bell pepper slices (about 1/2 qt.; may use frozen)

1 pkgtaco seasoning mix (i like lawry's)

2/3 cwater
-
1 to 1 1/2 lbleftover roasted turkey meat, bite size or thick shreds

6 smflour tortillas
-
3 cshredded extra-sharp cheddar cheese
-
1 or 2 lgfresh tomatoes, sliced or chopped
-
lettuce, shredded or chopped
-
sour cream
-
salsa, your favorite
-
sliced black olives, optional (i like kalamata)
How To Make easy leftover turkey mini-fajitas

1Gather and prep all ingredients.

2Heat oil in large skillet over medium heat; add onions and peppers' saute until peppers are tender-crisp.

3Stir in taco seasoning mix and water; add turkey. stirring until coated with taco seasoning sauce.

4Cover, reduce heat to low/ medium-low and let simmer while preparing tortillas.

5Place a tortilla in a medium skillet over medium heat; sprinkle 1/2 cup cheese over tortilla.

6When cheese begins to melt, add 1 slice of tomato or equivalent amount of chopped tomato.

7Spoon some of the turkey mixture over tomatoes (about 1/6 of the mixture.)

8Remove from skillet to serving plate; scatter lettuce on top.

9Add a dollop of sour cream and a spoonful of salsa on top of the lettuce (and sliced olives, if using.) Serve.
