easy leftover turkey mini-fajitas
This is one of the recipes I created for using up that leftover holiday turkey. After several days of the traditional leftovers, your taste buds will appreciate the switch to the south-of-the-border flavors in these yummy little cheesy turkey fajitas.

Ingredients
- 1 tablespoon olive oil
- 1 large sweet onion, halved & sliced or rough chopped (your choice)
- 2 to 3 cups sweet bell pepper slices (about 1/2 qt.; may use frozen)
- 1 package taco seasoning mix (i like lawry's)
- 2/3 cup water
- 1 to 1 1/2 pounds leftover roasted turkey meat, bite size or thick shreds
- 6 small flour tortillas
- 3 cups shredded extra-sharp cheddar cheese
- 1 or 2 large fresh tomatoes, sliced or chopped
- lettuce, shredded or chopped
- sour cream
- salsa, your favorite
- sliced black olives, optional (i like kalamata)
How To Make easy leftover turkey mini-fajitas

Step 1Gather and prep all ingredients.

Step 2Heat oil in large skillet over medium heat; add onions and peppers' saute until peppers are tender-crisp.

Step 3Stir in taco seasoning mix and water; add turkey. stirring until coated with taco seasoning sauce.

Step 4Cover, reduce heat to low/ medium-low and let simmer while preparing tortillas.

Step 5Place a tortilla in a medium skillet over medium heat; sprinkle 1/2 cup cheese over tortilla.

Step 6When cheese begins to melt, add 1 slice of tomato or equivalent amount of chopped tomato.

Step 7Spoon some of the turkey mixture over tomatoes (about 1/6 of the mixture.)

Step 8Remove from skillet to serving plate; scatter lettuce on top.

Step 9Add a dollop of sour cream and a spoonful of salsa on top of the lettuce (and sliced olives, if using.) Serve.
