How to Make Country Market Bean Soup
- Wash beans. Soak beans overnight in enough water to cover.
- Drain beans and place in 4 qt. dutch oven/stockpot. Add water, chicken broth, tomatoes, garlic, onion. Cover and bring to a boil.
- Reduce heat and simmer 1 1/2 hours or until beans are tender. Remove lid. Add remaining seasonings and meats. Simmer uncovered for 30 minutes, stirring occasionally.
- Serve hot with biscuits or cornbread. Yields 2 1/2 qts.
- Notes: You can use any combination of cooked meats. Smoked turkey works great in this recipe.
You can substitute 1-2 stalks of chopped celery for the celery seed. Enjoy!
