Classic Hamburger Casserole

1 lb
ground turkey breast, cooked
1/2 c
chopped onion
1/2 c
chopped green bell pepper
1.75 c
frozen mixed vegetables
10.75 oz
cream of mushroom soup, fat-free
1/4 c
1 tsp
1/2 tsp
2 c
mashed potatoes
1 c
cheddar cheese, grated and reduced fat


1Preheat oven to 350.
2Prepare a 2-quart casserole dish with cooking spray; set aside.
3In a skillet, cook turkey, onions and bell peppers until no pink remains in turkey and vegetables are tender.
4Stir in mixed vegetables, soup, water, salt and black pepper.
5Pour into prepared pan.
6Spoon mashed potatoes in mounds around edge of casserole.
7Bake, uncovered, for 25 minutes or until heated through.
8Top with cheddar cheese and bake 5 minutes longer.
