Ingredients
- 1 pound ground turkey breast, cooked
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1.75 cups frozen mixed vegetables
- 10.75 ounces cream of mushroom soup, fat-free
- 1/4 cup water
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups mashed potatoes
- 1 cup cheddar cheese, grated and reduced fat

Step 1Preheat oven to 350.

Step 2Prepare a 2-quart casserole dish with cooking spray; set aside.

Step 3In a skillet, cook turkey, onions and bell peppers until no pink remains in turkey and vegetables are tender.

Step 4Stir in mixed vegetables, soup, water, salt and black pepper.

Step 5Pour into prepared pan.

Step 6Spoon mashed potatoes in mounds around edge of casserole.

Step 7Bake, uncovered, for 25 minutes or until heated through.
