Chunky Meat Sauce topped Spaghetti Squash

This is the first time I have used spaghetti squash. I had never realized such an amazing vegetable existed. Being introduced to this squash by one of my chef mentors from college, I wanted to try complementing this dish with a sauce recipe of my own. I hope you all enjoy this recipe as much as my family did.

1 small
spaghetti squash
1/4 c
butter, unsalted


2 c
spaghetti sauce
6 oz
tomato paste with garlic
2/3 c
unsalted chicken broth
2 tsp
white vinegar
2 tsp
garlic powder
1 small
onion, coarsely chopped
14 oz
turkey kielbasa


1Preheat oven to 350 degrees. Stab Spaghetti Squash in various places, with a skewer, to let steam out when baked. Place Squash in an 8x8 baking dish. Let bake in fully, preheated oven for 50 minutes.
2For Sauce: combine spaghetti sauce, tomato paste, broth, vinegar and seasonings in a medium saucepan. Bring to a boil. Add onions and kielbasa. Simmer sauce for about 25 minutes.
3Take spaghetti squash out of the oven and let sit for 5 minutes before handling. using two oven mitts, move to a cutting board. Cut in half, in the middle, with a bread knife (serrated edge). Carefully scrape out the pulp and seeds in the center.

*** May need an oven mitt to handle the squash.***
4Using a fork, loosen the spaghetti from the skin of the squash and place into a medium sized bowl. Add butter and mix thoroughly until melted.
5Place your spaghetti in a bowl and top with chunky meat sauce. You are now ready to serve and eat this delicious dish! Enjoy!
