veggie tacos
My daughter, who is now vegetarian, can eat these when I make fajitas, and we don't waste any of the veggies! These are actually pretty good, and I am a carnivore! She doesn't like mushrooms, so you can easily add more of the other veggies to make up for them.

Ingredients

- 1/2 teaspoon salt
- 3/4 cup salsa
- 1 cup sliced fresh mushrooms
- 1 medium onion, cut in wedges
- 1 medium green pepper, cut in eighths
- 1 medium zucchini, cut into 1/4" slices
- 1 package taco seasoning mix
- 12 - corn taco shells
- 1/4 teaspoon crushed red pepper
- 1 cup shredded monterey jack or cheddar
How To Make veggie tacos

Step 1Oven to 400 degrees. Spray 15x10 glass pan with PAM. Put mushrooms, onion, bell pepper and zucchini in a single layer on bottom of pan. Sprinkle with seasoning, salt and red pepper. Bake uncovered 20 min, turning vegetables once or twice to cook evenly. Sprinkle cheese in the taco shells. Add roasted vegetables and top with salsa.
