My oldest grandson Gavin (13), made up this recipe, we all loved it! He's in the Boy Scouts & working on his cooking badge, he has been cooking with me and his mother since he could walk and talk. He is the sweetest boy I've ever known, he helps take care of his little sister and two little brothers, they adore him! This is easy... and tastes great! I love that Gavin isn't afraid to "experiment" with unusual ingredients. Pita & Bok Choy! Mind Blown! I think this is a Blue Ribbon Recipe! Way to go Gavin! So happy that you Play With Your Food! xo

Ingredients

  • SHELLS
  • 2 packages pita pockets, (cut in half to form two taco shells)
  • MEAT FILLING
  • 2 pounds ground beef
  • 1/2 large onion, chopped or minced
  • 2 tablespoons salsa or taco sauce
  • 1 teaspoon each: ground cumin, garlic powder, chili powder
  • 1/8 teaspoon ground cayenne pepper (optional)
  • ADDITIONAL FILLINGS
  • 4 - 6 large chinese cabbage or bok choy, chopped
  • 1 - 3 large tomatoes, chopped large
  • 1 bag cheddar cheese, shredded (or any cheese you like)
  • 1 jar salsa, chunky or taco sauce
  • 1/2 large onion, minced
  • 1 can (15 ounces) refried beans plus 3 tbs water
  • 1 package (16 ounces) sour cream

How To Make pita bok choy tacos gavin's

  • This is bok choy leaves cut up.
    Step 1
    Prepare all of the fillings or toppings and put into bowls.
  • Ground beef.
    Step 2
    In Skillet: Cook the ground beef, breaking it up as you cook.
  • Meat mixture.
    Step 3
    Add chopped onions and continue cooking until translucent.
  • Step 4
    Add the spices and two Tablespoons of salsa or taco sauce.
  • Step 5
    Put Refried Beans into a sauce pan with water. Stir the refried beans while heating with the water, add more water if needed.
  • Step 6
    While the meat mixture is cooking, set all the topping or filling ingredients on the table in bowls.
  • Step 7
    Cut the pita pockets in half, forming to half moon shells. Place on the table with the fillings. *** Or you can buy pre-cut pita which is more expensive and you get less in a package. The packaging says 10 Pita Pockets... which is 5 pitas cut in halfs.
  • Step 8
    Put the meat mixture in a serving bowl. Put the refried beans in a serving bowl. Bring to the table to let everyone stat assembling their own tacos!

    Step 9
    *** Gavin says, that he loves using the bok choy instead of lettuce, because he likes the texture and flavor better. *** If you don't like pita pockets, feel free to use tortillas, taco shells, or anything you like. *** This photo is Gavin's recipe using corn tortillas.
