This recipe (minus the cheese) was passed down to generations of Mexican migrant workers. The ingredients are simple, cheap, and hearty. A meal of two burritos would sustain migrants throughout the sun chapped day and into the evening.

Ingredients For migrant worker burritos with colby jack cheese

  • 1 can
    la preferida refried beans authentic 16 oz
  • 2 Tbsp
    corn oil
  • 4
    eggs
  • 6
    tortillas, flour
  • 1 pinch
    onion powder
  • 1 Tbsp
    garlic powder
  • 1 pinch
    tone's garlic sriracha
  • 1 c
    shredded colby jack cheese

How To Make migrant worker burritos with colby jack cheese

    Heat oil in a saucepan at a medium heat.

    Add can of refried beans and season lightly with garlic sriracha. Refry the beans to a slight crisp.

    Break the eggs directly into the beans and mix thoroughly. Add garlic and onion powder.
  • On the stovetop.

    Continue stirring mixture until all the ingredients combine completely.

    Warm flour tortillas on a griddle or over direct flame.
  • Two burritos; folded and ready to be eaten or packed for lunch.

    Spoon bean and egg mixture into tortillas and add cheese. Roll into a burrito and let sit for few minutes.
