lentil tacos
I wanted a healthier version of tacos; this one will work well for vegetarians/vegans - just use vegetable stock. This recipe comes together in short order.

Ingredients
- 1 cup lentils
- 1/4 cup amaranth
- 1 box beef stock
- 1 bunch baby bok choy
- 1 teaspoon butter or organic melt
- 1-2 teaspoon a smoky, spicy spice mix
- To Taste salt & pepper
- corn tortillas
- arugula microgreens or baby arugula
How To Make lentil tacos

Step 1Add lentils, amaranth, and stock from a box to a saucepan. Bring to a boil and reduce the heat to medium or medium-low and cook until the liquid is absorbed.

Step 2In a small skillet, over medium-low heat, melt butter. Add bok choy and toss with hot and smoky spice. Cook 1-2 minutes until lightly sauteed. Remove from heat and set aside.

Step 3Once lentils have cooked, combine with bok choy. Taste and season as needed.

Step 4Served in corn tortillas with arugula microgreens.
