lemon chicken tacos
I started making these years ago on Christmas Eve when we were expecting family and friends from out of town and I wanted to have dinner ready to go when they arrived at our house . Over the years I have been asked for this simple recipe many times! If I don't have rotisserie chicken, I cook a couple of breasts in chicken bouillion, shred those and add the lemon juice and continue on. These are yummy year round and are a nice break from heavier, more elaborate holiday food. Enjoy!

Ingredients
- 2 cups shredded rotisserie chicken breast
- - juice from 1 lemon
- - salt & pepper to taste
- 8 - corn tortillas
- 1 cup shredded colby/jack cheese
- 1 - avocado, sliced
- 2 - roma tomatos, diced
- - shredded lettuce
- - canola oil to lightly fry tortillas
- - your favorite salsa or taco sauce
How To Make lemon chicken tacos

Step 1Heat lemon juice in skillet - Add chicken and heat through - Add salt and pepper to taste. Keep warm on "low" setting.

Step 2Lightly fry and fold tortillas - Drain thoroughly on paper towels

Step 3Add chicken to prepared tortillas.

Step 4Top with cheese, avocado, tomato and lettuce and your favorite salsa or taco sauce. Serve with cheese topped refried beans
