Great way to use leftover steak or roast beef. I grew up eating this as a child, as my Mom was really good at using leftovers in creative ways. Great with beef, but you can do the same with pork and chicken. A taco is anything you roll up in a tortilla!!! You can also use this as a burrito filling, just incorporate all the desired garnishes before rolling it up. This ALSO makes a great hash for breakfast. Just put it on a plate, topped with a runny sunny-side-up or over-medium egg. Yum!

Ingredients

  • 1 1/2 tablespoons olive oil
  • 1 medium potato, peeled and diced
  • 1/2 small onion, sliced
  • 2-3 cloves garlic
  • 1 small tomato, diced (optional)
  • 1 tablespoon canned chopped hatch green chiles
  • 2 cups leftover steak, thinly sliced
  • corn or flour tortillas
  • sour cream, optional
  • grated cotija or parmesan cheese, optional

How To Make leftover-steak tacos, burritos or hash

  • Step 1
    Heat the oil in a skillet. Add the diced potato and fry, turning frequently, until the potato is soft and starting to brown slightly.
  • Step 2
    Add the sliced onion and let cook until slightly softened. Add the garlic and continue to cook for 1 minute. If using the tomato, add it and saute for another few minutes until they release their liquid and slightly soften.
  • Step 3
    Add the green chiles, stir to combine, and warm through. Add the steak and toss until heated through, but don't overcook.
  • Step 4
    Heat the tortillas and serve alongside the meat, as well as the optional garnishes. Diners can roll the meat into the tortillas at the table, adding garnishes as desired.
