easy fish tacos

We like to go to a local restaurant for Friday Fish Fry and always order the baked cod. There is often some fish leftover and I decided to try using it to make fish tacos. I cobbled together several different recipes to come up with this. NOTE: Not too long ago, I noticed that there were new products in the condiment section of the store, including Hellman's Cilantro-Lime Sauce. I used that instead of making my own seasoned crema or buying real crema. When we put our tacos together, this made enough fish for 4 tacos, but there was extra cabbage slaw, so judge serving size for yourself!

Ingredients For easy fish tacos

  • SLAW
  • 3 c
    shredded cabbage
  • 1 c
    frozen corn, thawed
  • 1 Tbsp
    honey
  • 1/4 c
    mayonnaise (lite or regular)
  • garlic salt, pepper, to taste
  • 1 Tbsp
    lime juice
  • 1/4 tsp
    tajin seasoning, optional
  • 1 - 2 Tbsp
    minced red onion
  • 1/2 - 1
    jalapeño, seeded and minced
  • 2 Tbsp
    cilantro, minced
  • FISH
  • 1 1/2 - 2
    left over cod fillets, or other white flaky fish
  • 1/4 tsp
    cumin
  • 1/4 tsp
    paprika
  • 1/4 tsp
    chili powder or chipotle powder
  • 1/4 tsp
    garlic salt
  • 1/4 tsp
    pepper
  • 1 Tbsp
    vegetable oil (grape seed, olive oil, etc.)
  • 1 Tbsp
    lime juice
  • TO SERVE
  • 2
    corn or flour tortillas, per person
  • crema, (i used hellman's lime-cilantro sauce)
  • guacamole or avocado slices
  • cojita cheese, diced tomatoes, fresh cilantro, lime wedges, pickled jalapenos and hot sauce

How To Make easy fish tacos

  • 1
    For the Slaw: In a medium bowl, mix together the mayonnaise, lime juice, honey, garlic salt, pepper and tajin, if using. Add the shredded cabbage, onion, corn and jalapeño. Mix together, taste for seasoning and refrigerate until time to serve.

    For the Fish: Break apart the left-over baked cod and sprinkle with seasonings, oil and lime juice. Let sit for 10 minutes or so. Then warm up the seasoned fish in a skillet.

    To put together: Warm tortillas according to package directions. Into each tortilla, layer seasoned fish and slaw. Add toppings of choice.
