12small corn tortillas
2cooked chicken breast - shredded
1-2 can(s)hatch brand enchilada sauce
1 pkgmixed mexican cheese - shredded
How to Make Easy Enchiladas
- Chicken can be poached, baked or rotisserie. Heat chicken in a small amount of enchilada sauce
- Put a layer of sauce in bottom of 9" x 11" glass pan. Heat tortillas in a dry pan before filling. Place 1-2 Tbs chicken on tortilla, roll, and place seam side down in glass pan.
- Cover tortillas with additional sauce. Spread Mexican blend cheese over the top. Bake at 350° for about 20 minutes.
