Our family has always loved chicken fajitas. This is an easy way to fix everything and then let the slow cooker do the work. Delicious with a Margarita!

Ingredients

  • 1/2 medium
    green bell pepper
  • 1/2 medium
    red bell pepper
  • 1/2 medium
    red onion
  • 1/2 can(s)
    tomatoes canned (cut)
  • 1 clove
    garlic - minced
  • 2 Tbsp
    taco seasoning mix
  • 2 medium
    chicken breast tenderloins (cut into pieces)
  • ·
    lime juice (several squeezes
  • ·
    soft shell tortillas

How to Make CHICKEN FAJITAS IN THE SLOW COOKER

Step-by-Step

  1. Slice Peppers in small strips. Cut onion in strips.
  2. Mince Garlic. Cut chicken in strips.
  3. Turn slow cooker on low. Add half of Green and Red Peppers. Add half of onion.
  4. Lay chicken strips on top of peppers and sprinkle with 1 Tablespoon of taco seasoning. Turn chicken over and sprinkle with 1 Tablespoon of taco seasoning.
  5. Sprinkle with lime juice, Then add cut tomatoes.
  6. Next add the rest of the peppers, onion and garlic. Sprinkle with more lime juice
  7. Cook on low for 3 hours. Stir once.
