charlene's irish tacos

This is a recipe that my Mom, Charlene, dreamed up when I was growing up. We have substituted Ranch Dressing for the sour cream at times. Also cooking time does not include time to bake the potatoes.

Ingredients

  • 4 baked potatoes
  • 1 pound ground beef
  • 1/2 medium onion, diced
  • 2 cloves garlic, minced
  • 1 package taco seasoning
  • 1/2 cup water
  • salsa, to taste
  • salt and pepper, to taste
  • 1 cup medium cheddar cheese, grated
  • 2 tomatoes, seeded and diced
  • 2 green onions, sliced thinly
  • 3/4 cup sour cream
  • 1 avocado, sliced thinly

How To Make charlene's irish tacos

  • Step 1
    Prepare the baked potatoes and set them aside to cool for 10 minutes.
  • Step 2
    Heat a large skillet over medium heat and add the ground beef, diced onion and minced garlic. Season with salt and pepper. Cook until no longer pink. Drain.
  • Step 3
    Add the taco seasoning, water and salsa, as much or as little as you want. Stir to combine then bring to a simmer over medium heat. Cover and reduce heat to low. Simmer for 15 minutes. If there is too much liquid, simmer with the lid off for a bit.
  • Step 4
    Gently slice open potatoes lengthwise and squeeze the sides to open, careful not to let them break in half completely.
  • Step 5
    Season the potato with salt and pepper, and mash with sour cream. Divide the taco meat among the potatoes and top with freshly shredded cheddar, green onions, tomatoes, avocadoes or any of your favorite taco toppings.
