black bean quesadillas

Ingredients For black bean quesadillas

  • 1/4 c
    red onion, finely diced
  • 1/4 c
    red pepper, diced
  • 1/4 c
    black beans, rinsed
  • 1 pinch
    cilantro
  • 1/2 tsp
    ground cumin
  • 2 lg
    whole wheat tortillas - 12 inch
  • 1/4 c
    mexican/cheddar cheese, shredded
  • 1/4 c
    ground meat
  • roma tomatoes, diced
  • chunky salsa

How To Make black bean quesadillas

    Preheat oven to 350.
  • 2
    Cook small amount of ground meat. Cook until done. Put the ground meat, red onion, red pepper, black beans, cilantro and cumin in a small bowl and mix.

    Heat a large nonstick pan to medium heat. Coat with cooking spray.

    Place a tortilla in the pan for about 1 minute to warm. Place half of the bean mixture on one side of the tortilla. Fold tortilla over to cover mixture. Cook 1-2 minutes. Then flip. Repeat with the second tortilla.

    Remove from heat and place both tortillas on a baking sheet. Open each tortilla and sprinkle generously with shredded cheese. Then fold over again before putting in oven. Bake in preheated oven about 5 -10 minutes until nicely warm and cheese is melted.

    Cut each quesadilla into two pieces. Serve with chunky salsa and chopped tomatoes.

    You can substitute green for red pepper. Also use thawed frozen corn for another addition.
