Ingredients
- 1 1/2 pounds hamburger
- 1 teaspoon salt
- 1/8 teaspoon garlic powder
- 1 medium onion, chopped
- 1 pound can refried beans
- 12 - corn tortillas
- 1/3 cup bottled or canned taco sauce
- - salad oil, shortening or lard to fry tortillas
- 2 - 10 oz cans enchilada sauce
- - sour cream
- 3 cups shredded cheddar (10 oz)
- - canned greeen chili salsa (sauce)
How To Make beef and bean enchiladas

Step 1In frying pan, crumble hamburger and saute with onions until meat is browned and onions are soft. Stir in bens, salt, garlic powder and taco sauce and heat until bubbly. Dip tortillas, one at a time in hot oil to soften; drain quickly. Heat enchilada sauce, pour about half into an ungreased shallow 3 quart baking dish. Place about 1/3 c hamburger filling on each tortilla and roll to enclose. Place flap side down in sauce in bottom of baking dish. Pour remaining enchilada sauce evenly over tortillas; cover with cheese. Bake, uncovered, in a 350 degree oven for about 15-20 min, or until thoroughly heated (or cover and refrigerate for up to 1 day; if taken directly from fridge increase baking time to 45 min). Garnish with sour cream and green chili sauce.
