Ingredients
- LAMB
- 1 rack of lamb (about 8 chops)
- 2 tablespoons olive oil
- salt and pepper
- RED WINE BUTTER SAUCE
- 1 cup dry red wine
- 1 medium shallot, chopped
- 4 cloves garlic, minced
- 2 teaspoons beef demi glace
- 4 ounces cold butter, cut into chunks
- salt and pepper
How To Make rack of lamb with red wine butter sauce

Step 1Preheat the oven 450 degrees F. Cut the rack of lamb into chops. Add olive oil to cast iron pan. Season the chops with salt and pepper. Sear the chops on each side for 2 minutes on the first side then 1 minute on the other. Place in the oven and roast about 5 minutes. Remove to a cutting board to rest.

Step 2To make the sauce, combine the wine, shallots and garlic and bring to a boil. Reduce to a simmer. Let reduce to about 1/2 cup. Pour through a fine mesh sieve, discarding the solids.

Step 3Stir in the demi glace and then whisk in the butter, one pat at a time, over low heat. Remove from heat and serve with the lamb.
