For this recipe, you can use top round steak, beef for London Broil, or flank steak. All cuts of beef work equally well with this mushroom sauce. The mushroom sauce is awesome!

Ingredients

  • 3/4 cup - shallots, chopped (divided)
  • 2 tablespoons fresh garlic, minced (divided)
  • 2 tablespoons olive oil (divided)
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon-style mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon hot sauce (such as tabasco)
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon dry rosemary
  • 2 pounds london broil (or flank steak or top round steak)
  • 16 ounces sliced button mushrooms
  • 3/4 teaspoon salt (divided)
  • 1/2 teaspoon black pepper (divided)
  • 1 1/2 cups low-sodium beef stock (divided)
  • 1 tablespoon all-purpose flour
  • 1 1/2 tablespoons unsalted butter
  • 2 teaspoons low-sodium soy sauce

How To Make london broil with mushroom sauce

  • Step 1
    In a large mixing bowl, whisk together 1/2 cup shallots, 1 tablespoon garlic, 1 tablespoon oil, vinegar, mustard, Worcestershire sauce, hot sauce, thyme, and rosemary. Add beef, turning to thoroughly coat beef with the marinade. Refrigerate 3 1/2 hours, turning occasionally.

    Let beef mixture stand at room temperature for 30 minutes before cooking.

    Place oven rack 4 inches from broiler, and preheat broiler.
  • Step 4
    Heat a large skillet over medium heat. Add remaining 1 tablespoon oil to pan; swirl to coat. Add remaining 1/4 cup shallots, remaining 1 tablespoon garlic, and mushrooms to pan; cook 10 minutes or until mushrooms are browned, stirring occasionally. Stir in 1/4 teaspoon salt and 1/4 teaspoon pepper. Combine 1/4 cup stock and flour in a small bowl, stirring with a whisk. Add flour mixture and remaining 1 1/4 cups stock to the skillet, and simmer for 4 minutes or until sauce is slightly thickened. Remove skillet from heat, then stir in butter and soy sauce. Keep warm.

    Remove beef from marinade; discard marinade. Use a paper towel to wipe marinade from beef. Sprinkle remaining 1/2 teaspoon salt and remaining 1/4 teaspoon pepper on beef. Place a wire rack inside a large baking sheet with sides (like a heavy-duty cookie sheet or jelly-roll pan). Place the beef on the wire rack, and place baking pan in oven and let broil 5 minutes on each side for medium-rare or until broiled as desired.

    Place beef on a cutting board and let stand 5 minutes before slicing. Cut across the grain into thin slices. Serve with the mushroom sauce.
