- 4 pounds lamb shoulder steaks with bone
- coarse salt
- 10 peppercorns, crushed
- 4 medium onions, sliced
- 2 small lemons, thinly sliced
- 4 cloves garlic, crushed
- 1/4 cup fresh cilantro leaves
- 1 1/2 cups dry white wine
- 1 cup water
- 1/4 cup spanish olive oil

Step 1Rub meat with mixture of salt and pepper.

Step 2Layer onions, lamb, and lemon in large casserole.
