Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon each grated ginger and minced garlic
  • 10 ounces package frozen spinach thawed
  • 8 cups chicken or shrimp stock
  • 3 star anise
  • 2 tablespoons fish sauce
  • 16 peeled and deveined shrimp
  • 4 ounces rice noodles cooked according to directions and drained
  • 3 green onions chopped
  • 1/2 cup cilantro chopped

How To Make vietnamese style spinach & shrimp soup

  • Step 1
    Add the oil to a large pot. Stir in the garlic & ginger and cook 1 minute. Stir in the spinach and cook about 3 minutes. Add the chicken stock, fish sauce, star anise. Bring to a boil. Reduce to a simmer.
  • Step 2
    Stir in the shrimp and noodles. Cook 3 minutes. Add the green onions and cook 5 more minutes. Remove the star anise before serving and garnish with cilantro.
