Ingredients
- 1 tablespoon olive oil
- 1 tablespoon each grated ginger and minced garlic
- 10 ounces package frozen spinach thawed
- 8 cups chicken or shrimp stock
- 3 star anise
- 2 tablespoons fish sauce
- 16 peeled and deveined shrimp
- 4 ounces rice noodles cooked according to directions and drained
- 3 green onions chopped
- 1/2 cup cilantro chopped
How To Make vietnamese style spinach & shrimp soup

Step 1Add the oil to a large pot. Stir in the garlic & ginger and cook 1 minute. Stir in the spinach and cook about 3 minutes. Add the chicken stock, fish sauce, star anise. Bring to a boil. Reduce to a simmer.

Step 2Stir in the shrimp and noodles. Cook 3 minutes. Add the green onions and cook 5 more minutes. Remove the star anise before serving and garnish with cilantro.
