Ingredients
- 1 pound shrimp, peeled and deveined
- salt and pepper
- 2 tablespoons olive oil
- 3 tablespoons butter
- 1 medium shallot, chopped
- 4 cloves garlic, minced
- 20 grape tomatoes, cut in half
- 3 cups fresh spinach
- 1/2 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 1/4 cup fresh basil, chiffonade
- 1 lemon
How To Make tuscan shrimp

Step 1Season the shrimp with salt and pepper. Add the olive oil to a saucepan and cook the shrimp for 2 minutes on each side. Remove with a slotted spoon and set aside.

Step 2Add the butter to the same pan. Add the shallot and garlic and cook 1 minutes. Add the tomatoes and spinach and cook until spinach is wilted.

Step 3Pour in the heavy cream and add the Parmesan. Cook until the Parmesan is melted.

Step 4Stir in the basil. Serve with a lemon wedge for drizzling.
