Ingredients For tuscan shrimp

  • 1 lb
    shrimp, peeled and deveined
  • salt and pepper
  • 2 Tbsp
    olive oil
  • 3 Tbsp
    butter
  • 1 md
    shallot, chopped
  • 4 clove
    garlic, minced
  • 20
    grape tomatoes, cut in half
  • 3 c
    fresh spinach
  • 1/2 c
    heavy cream
  • 1/2 c
    Parmesan cheese, grated
  • 1/4 c
    fresh basil, chiffonade
  • 1
    lemon

How To Make tuscan shrimp

  • 1
    Season the shrimp with salt and pepper. Add the olive oil to a saucepan and cook the shrimp for 2 minutes on each side. Remove with a slotted spoon and set aside.

    Add the butter to the same pan. Add the shallot and garlic and cook 1 minutes. Add the tomatoes and spinach and cook until spinach is wilted.

    Pour in the heavy cream and add the Parmesan. Cook until the Parmesan is melted.

    Stir in the basil. Serve with a lemon wedge for drizzling.
