- 8 ounces peeled deveined shrimp rough chop
- 2 tablespoons red curry paste
- 1 large egg
- 2 teaspoons fish sauce
- 3 tablespoons brown sugar
- 2 tablespoons coconut cream
- 1/4 cup chinese long beans chopped
- 2 tablespoons thai basil leaves chopped
- 2 tablespoons oil
- SWEET CILANTRO SAUCE
- 1/2 cup thai sweet chili sauce
- 1 tablespoon fresh lime juice
- 2 tablespoons each cilantro chopped and brown sugar
- 1 teaspoon ginger minced

Step 1Make the sweet cilantro sauce by mixing all ingredients together and set aside..

Step 2Chill the shrimp for 15 minutes. Combine the chilled shrimp with the red curry paste, egg, fish sauce, sugar, Chinese long beans, basil and coconut cream in a food processor. Make into patties

Step 3Heat oil in skillet. Fry the patties in oil until they are browned and cooked through about 5 minutes. Serve drizzled with sweet cilantro sauce
