super salmon cakes
These salmon cakes are just awesome! The absolute best when served with a nice cheese sauce! Give them a try and enjoy :) The prep time doesn't include the 45 minutes in the refrigerator. My recipe for "A Nice Cheese Sauce" is posted too.

Ingredients
- 1/4 cup minced onion
- 1/4 cup mayo
- 1 tablespoon lemon juice
- 1/4 teaspoon seasoned salt
- 1/4 teaspoon red pepper (cayenne)
- 1 - beaten egg
- 1 can salmon (drained, skin and bones removed)
- 1 cup dry bread crumbs, divided
- 3 tablespoons butter
How To Make super salmon cakes

Step 1Combine the first five ingredients. Stir in the egg, flaked salmon, and 4 tablespoons of bread crumbs. Refrigerate for 45 minutes.

Step 2Divide mixture into 8 balls. Roll balls in the remaining bread crumbs. Flatten balls into 1/2 inch thick patties.

Step 3Fry in melted butter for 3 to 4 minutes per side, until nicely browned.

Step 4These are awesome served with a cheese sauce. That's how we enjoy them!
