Ingredients

  • 3 pounds dungeness crab meat, if frozen remove meat from the shell
  • 2 tablespoons olive oil
  • 1 medium shallot, chopped
  • 1 inch piece of ginger, grated
  • 4 cloves garlic, minced
  • 1 jalapeno, seeded and chopped
  • 1 large tomato, chopped
  • 1 tablespoon ketchup
  • 1 teaspoon salt
  • 1 teaspoon granulated sugar
  • 1 teaspoon fish sauce
  • 5 tablespoons butter cut into cubes

How To Make steamed crab with tomato butter

  • Step 1
    Remove the crab meat from the shells and set aside.
  • Step 2
    Add the oil to a saucepan. Saute the shallot, garlic, and jalapeno until softened. Add the tomato and cook for 2 minutes. Add the ketchup, salt, sugar, and fish sauce. Cook for 5 minutes.
  • Step 3
    Use an immersion blender or food processor to process until smoother.
  • Step 4
    Get a steamer ready and add the crab meat to steam.
  • Step 5
    While the crab is steaming put the tomato mixture back on the stove and whisk in the cold butter one cube at a time.
  • Step 6
    Serve with the crab.
