  • 1 tablespoon olive oil
  • 1 1/4 pounds medium shrimp, peeled and deveined
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • red pepper flakes, to taste
  • 2 cups cherry tomatoes, halved
  • 2 medium garlic cloves, minced
  • 1/2 teaspoon dried oregano
  • 1/4 cup chicken stock
  • 3 tablespoons Feta cheese, crumbled
  • sliced Kalamata olives, to taste

How To Make spicy shrimp with tomatoes, feta, and olives

  • Step 1
    Heat oil over medium-high heat. Saute shrimp along with salt and pepper. Cook until the shrimp begin to turn pink.
  • Step 2
    Add the sliced tomatoes, garlic, oregano, and red pepper flakes. Stir until the tomatoes soften.
  • Step 3
    Add stock and cook until shrimp are cooked through - be careful not to overcook the shrimp.
  • Step 4
    Add the Feta cheese and olives. Stir to mix.
  • Step 5
    Serve immediately along with a pasta of your choice - we like orzo pasta. Don't forget the bread.
